♥...Light Cheese Cake...♥

My Sunday morning project! Light Cheese Cake as it's named by my dear friend, Hasue! A great cook and baker with lovely kids, writer of Hasue : I Love My Life.

Haaah Sue, ni dia my version of your cake! Memang sedap weiiiiii!!! Sedap sampai jilat garfu...thanks for sharing ya! Allow me to spread the recipe to others here...thanks again my friend!

LIGHT CHEESE CAKE by Hasue

Ingredients :~ 8" pan ( I used a loaf pan )

• 125gm cream cheese (add up to 150gm if you prefer more cheesy )
• 300ml fresh milk
• 80gm butter or margerine ( I used butter )
• 80gm plain flour
• 80gm refined sugar
• 3nos A sized eggs ~ separate egg yolks and egg white
• few drops of vanilla essence / lemon juice ( I added lemon juice )

Method :~
  1. Heat up fresh milk in a saucepan and add cream cheese. Stir constantly using a hand whisk until cream cheese melted. Add the butter / margarine, stir until melted, turn off heat and set aside.
  2. Beat egg whites with sugar until a stiff peak is formed. 
  3. In the larger bowl, beat egg yolks until fluffy. Add cheese mixture and stir. 
  4. Sift in flour gradually and beat again using low speed. Scrape the sides of the bowl if needed and stir slowly using a hand whisk. 
  5. Finally fold in the beaten egg white until well combined. 
  6. Pour mixture into greased and lined cake pan. Place the cake pan in another pan containing hot water. 
  7. Bake at 160C for 45 minutes (or until done) using steam bath method. 
Note : 
You may sprinkle some almond nibs/flakes or grated cheddar cheese over the cake mixture before placing it in the oven.
You may substiture fresh milk with chocolate or strawberry flavoured milk.


The result ??? A truly soft and light cheese cake is done! Ooooo yummyyyyyy.... ^___^

    Thanks for coming over. I never tried baking an eggless cheesecake except for those chilled types. Usually for other cakes, I'll substitute egg with yoghurt, milk or buttermilk. Guess you try it out and let me know, coz I want to know too! Hehehe :)

    Looking at your inspirational picture & Hasue's tutorial it induce me to try out the recipe. I double the recipe & extend the baking hours & after checking & rechecking for doneness STILL it came out wet & gooey at the bottom
    I forgot to use HOT WATER for the bain marie. Is this why?? After putting it back in the oven
    It took like forever to cook & still… it didn’t.

  70. Saya mencuba resipi puan tadi. dlm ketuhar, kek tu nampak sedang naik tapi ada retak di permukaan..kenapa? Lepas bake, perlukah sejukkan kek dlm pan bersama pan yg mengandungi air di luar?

    Hello Evelyn, ahh lega baca kek dah ok! Permukaan akan retak kalau oven terlalu panas. Settings kena ikut oven masing2. Tak perlu sejukkan kek beralaskan air.

  73. Saya pun mencuba buat 2 kali resipinya sebab ia tak cukup kalau buat 1 kali..ia agak lama pun masih belum masak..lepas masak, kek di atas ok tapi bawah masih tak jadi..nampaknya tak boleh buat 2 kali..ye?
